A couple years ago, I tried a Paula Deen recipe for sweet potatoes and my family insists on them every year now. The sweet potato balls are time consuming but worth it and they have a fun surprise in the middle.

Ingredients:
- 4 large sweet potato
- 2/3 cup brown sugar, packed
- 2 tbsp orange juice
- 1 tsp orange zest
- 1/2 tsp fresh nutmeg, grated
- 2 cups shredded coconut, sweetened
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1 bag mini marshmallows
- cupcake papers
Directions:
- Preheat oven to 350 degrees F.
- Add liners to a cupcake pan.
- Bake the potatoes until tender, then peel and mash them.
- Stir in the brown sugar, orange juice, zest and nutmeg.
- In a separate bowl, toss the coconut with the sugar and cinnamon.
- Spoon a heaping tablespoon of potato mixture into your palm and press two mini marshmallows into the middle of the mixture.
- Roll mixture in palms until a ball is formed with the marshmallows in the middle.
- Roll the ball in the coconut mixture and place in a cupcake liner.
- Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open
