Mint is one of my favorite flavors. Most of my family hates mint. This is the reason that my Girl Scout cookies are the only ones that last several months. The thin mints are mine and mine alone. When I was choosing what food gifts I would make for friends and family this year, I came across this recipe. These creamy, minty pillows of goodness are a little piece of heaven! |

Chef's Note: These could be done in any colors for any occasion. I used liquid food coloring and it worked too.

- 1/4 c butter, softened
- 1/3 c light corn syrup
- 3-4 c powdered sugar, divided
- 1-2 tsp peppermint or mint extract
- food coloring, preferably gel or paste
- 1/2 c granulated sugar, for rolling
Directions:
- In a small bowl, combine butter and corn syrup.
- Add 2 cups powdered sugar and your choice of extract (1/2 tsp at a time until mixture reaches your desired flavor); mix until well combined.
- Stir in an additional cup of powdered sugar.
- Sprinkle a cutting board with additional 1/2 cup powdered sugar and dump mixture onto the board.
- Knead the mixture until sugar is absorbed and is completely smooth, adding additional powdered sugar if needed.
- Divide dough into three portions.
- Tint one portion red and one green; leave one portion white.
- Shape into 3/4 inch balls and roll into granulated sugar.
- Flatten gently with a fork.
- Let candies stand, uncovered, at room temperature for 24 hours.
- Store in airtight container.
